Kale + cacciatore salami stuffed avocado.


An avocado a day keeps the doctor away — that’s the saying, right? No?

Well, that hasn’t stopped me from a daily indulgence, whether it be for breakfast scrambled over a bed of crispy prosciutto, or simply eaten by the spoonful like an oddly satisfying ice cream.

While I’ve waxed poetic about avocado in the past, and will probably continue to do so until it’s no longer as versatile as it is heart-healthy, I’ll spare you the play by play on the health benefits of the little green egg. Though, it never hurts to be aware of how healthy fats can help — just saying.

So, without further ado, here’s another avocado recipe to add to your (and my) growing arsenal:


Kale + cacciatore sausage stuffed avocado.

1 avocado

1 cup baby kale

3 slices of cured meat

3 olives

2 slices of Brie

Sprinkled Parmesan

1 tbsp olive oil
